What if the food was left out too long?

The calculator stops the countdown when refrigeration was later than two hours, or later than one hour in temperatures above 90°F / 32°C.

Can smell prove leftovers are safe?

No. Spoilage signs mean discard, but the absence of an odor does not prove safety. Time and temperature control still matter.
