- Fermentation research shows temperature affects microorganism growth, gas production and dough volume, but flour, inoculation, hydration, acidity and handling also matter.
- A recent linear rise rate can change quickly. Re-measure at the scheduled inspection and stop using the projection if the dough stalls, accelerates, collapses or shows contamination.

What to know before using the result.
Why doesn't CalcSpan give a fixed bulk-fermentation time from temperature?
Temperature changes microbial and gas-production rates, but flour, starter, inoculation, hydration, salt and dough strength also matter. Recipe target and observed rise are the primary signals.
How is the projected checkpoint calculated?
It extends only the rise rate measured between your two most recent observations and shows a broad inspection window. Fermentation is nonlinear, so the dough still decides.
What if the dough is collapsing or has unusual color or mold?
Do not keep extending the timer. A collapsing dough needs immediate recipe-specific handling; suspected contamination should not be tasted or rescued by waiting.
